Science Movie Night: Forks Over Knives
FORKS OVER KNIVES claims that many degenerative diseases can be controlled, or even reversed, by rejecting animal-based and processed foods. Using the results of studies conducted by Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, the film puts the idea of food as medicine to the test. Cameras follow “reality patients” who have chronic conditions ranging from heart disease to diabetes as doctors teach them how to adopt a whole-foods, plant-based diet as the primary approach to treating their ailments.
Join Professor Joan Benson from the University of Utah College of Health for a discussion of current research on diet and disease prevention following the film.
